REQUIREMENTS
I.Increase the success of the restaurant by contributing all aspects of cooking knowledge.
A.Understand the “Creole taste” and demonstrate this to all other cooks.
1.Taste all food to be sure it is seasoned correctly.
B.Proper timing and preparation of menu items to most effectively satisfy the customer’s expectations.
1.Be sure food is going out at correct times.
2.Food is cooked to order not pre-fried
C.Menu Development
1.Bring ideas on new specials
2.Exhibit creativity and enthusiasm
3.Talk about how we can do current dishes better
D.Oversee that all food in prepared properly
1.Correct plate presentation
2.Correct cooking degree
3.Correct cooking techniques during service
4.Hot food hot, cold food cold
5.Correct taste and seasoning of all food components
E.Respect of all products
1.Proper handling and storage
2.Proper cooking techniques during preparation
3.Produce the menu items needed for the level of volume
4.Reduce waste by properly utilizing product and policing others
F.Observe proper sanitation procedures at all times.
Work with cooks and back of house to assure all procedures are practiced at all times.
1.Maintain a professional appearance at all times
a.Be sure cooks look professional, have a clean uniform and have good hygiene.
2.Work clean, all stations, floors, walk-ins, storage areas and equipment.
a.Sanitation buckets, tasting spoons, plate wipes
b.Utilize closing procedure
