Category: Food & BeverageEssential Functions:Prepare Salads, Appetizers, Amuse bouche, Fruits, Pastry and Bread items Dressings, Cold Dishes in a consistent and creative manner to maintain quality standards.Follow and prepare all items on Station prep list or as otherwise told by supervisor and maintain a quality and fresh product.Prepare creative daily specials to be reviewed and approved by Chef or Sous Chef in alignment with restaurant conceptCheck all counts and weights on items prepared. Ensure quality standards are maintained by visual inspection of vegetable, fruit and meat used. Rotate fruits and vegetables properly to maintain freshness.Keep work area clean at all times. Keep walk-in, prep area and equipment up to Heath Department standards.Follow proper storage procedures for product in and out of walk-in before and after product is prepared. Communicate with supervisor on products needed on daily basis.Learn cooking times and temperatures and use in accordance with kitchen standards.Ability to write food prep sheets and produce requisites in Chef or Sous-Chef’s absence.SUPPORTIVE FUNCTIONS:In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the resort. Perform any general cleaning using hotel-cleaning products as told by to supervisor to adhere to health standards.
Perform other duties as assigned.SPECIFIC JOB KNOWLEDGE, SKILL & ABILITY:The individual must possess the following knowledge, skills, and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities.
Ability to use abrasive cleaning products.
Ability to understand the English language.
Ability to stoop, grasp, lift or carry or otherwise move or push goods on a hand cart and weighing up to 80 pounds.
Eye/hand coordination to use all kitchen equipment.
Ability to work standing up for long periods of time in a confined space.
Ability to work within extreme temperature ranges.
Ability to reach prep table in order to perform essential functions.Position Requirements:
QUALIFICATION STANDARDS:EDUCATION: Any combination of education, training or experience that provides required knowledge, skills and abilities. High School Diploma preferred.EXPERIENCE: Supervisory Experience and must have working knowledge of basic cold food preparation and sanitation standards as well as the operation of kitchen equipment. Cold food preparation experience preferred.LICENSES OR CERTIFICATES: Ability to obtain any required government licenses or certificates.APPEARANCE: Highly professional appearance, ability to maintain a neat, clean and well-groomed appearance (specific standards available)
